Sambal Matah (Raw Bali Style)

*Sambal Matah is a famous raw sambal from the Gods island of Bali.
INGREDIENTS:
15 shallots, peeled and sliced in half length-way, then finely crosswise sliced 15 bird’s eye chilies, sliced 4 cloves garlic, finely sliced 5 kaffir lime leaves, finely sliced 1 tsp roasted terasi (dried shrimp paste, sere), finely grated 4 stalks lemon grass, only take the white and tender part, bruised and finely sliced 1 tsp salt 2 tbsp freshly squeezed kaffir lime juice 1/4 grated kaffir lime skin 75 ml extra virgin coconut oil
COOKING INSTRUCTIONS:
1. Peel shallots and garlic, wash them, and then dice into slices. Set aside.
2. Wash chilies and then dice into slices. Set aside.
3. Peel and leave the outer parts of lemongrass, then dice into slices. Set aside.
4. Mix all of the diced ingredients in one bowl.
5. Add salt, sugar, and lime juice. Mix well.
6. Pour the extra virgin coconut oil into the sliced ingredients bowl. Mix it well and Sambal Matah is ready to be served.
